Really Easy Divine Chocolate Pudding

I can’t deny my love of chocolate and this recipe insures I can have my fix and NOT feel bad about it. You will love how simple AND tasty this pudding is. Recipe borrowed from my favorite raw food recipe book called Raw Energy (it’s listed as Vegan Dark Chocolate Bliss Pudding).

Dive right in and enjoy the sweetness of life, one savory spoonful at a time!

Raw Organic Ingredients: 

1/2 cup raw, unrefined coconut oil

1 cup raw cocoa (cacao) powder

3/4 cup raw honey

dash of cinnamon

pinch of sea salt

If coconut oil is solid, place jar in a pan of very hot water to liquefy. Put the coconut oil, cocoa, honey, cinnamon, and salt in a large bowl and stir rapidly using a spoon or whisk, until very smooth and quite thick (1-2 minutes). Scrape out the pudding and serve immediately or store in a small, tightly sealed container in the fridge for up to 3 weeks. If chilled, it will become thick and fudge-like. Goes well with bananas, pears, or mixed with almond butter.

Supplies healthy doses of antioxidants, B vitamins, potassium, calcium, magnesium, manganese, phosphorus, zinc, iron, copper, sulfur, protein, healthy fat and fiber.

    Sure,  Lisa! I don’t see why not. You could probably even use maple syrup. They all just vary in degrees of sweetness, as you know, so just play around with it. :)
